SPRING

This light golden honey is bright, sweet and fragrant with a floral taste. Spring honey is foraged from flowers and trees such as dandelions, clover, Maple and stone fruit trees, and other spring wildflowers as well as the nearby garden beds. The overall flavor is delicate and refreshing.

SUMMER

This darker golden honey is delicious and full of flavor. Summer honey is darker with a deeper, more robust flavor as a result of the honeybees foraging late spring/early summer flowers and trees such as Black Locust, Tulip Poplar and Linden. This honey has a rich, slightly fruity flavor with subtle herbal undertones and a hint of mint from Linden tree blooms. The sweetness is well-balanced with the other flavors, creating a pleasant complexity.

FALL

Our fall honey is dark, rich and robust, with a deeply floral character and warm, earthy complexity. Hints of caramel, molasses, spice, malt and toasted notes give it a full-bodied flavor and lingering finish. As the season progresses, the bees forage on a changing mix of late-summer and fall flowers, creating a honey that is less delicate than our spring honey and wonderfully complex.
